Hungarian Stuffed Peppers (Töltött Paprika) 🇭🇺

📝 Description

Töltött Paprika is a classic Hungarian comfort dish made with peppers stuffed with a flavorful mixture of ground meat and rice, then gently cooked in a rich tomato sauce. It’s hearty, slightly sweet, and full of traditional Hungarian flavors.

🧾 Ingredients

For the stuffed peppers:

  • 6–8 bell peppers (or Hungarian wax peppers)
  • 500g (1 lb) ground pork or beef
  • 1/2 cup rice (uncooked)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 egg
  • 1 teaspoon sweet Hungarian paprika
  • Salt and black pepper (to taste)

For the sauce:

  • 2 cups tomato puree or crushed tomatoes
  • 1 tablespoon tomato paste
  • 1 tablespoon sugar (optional, balances acidity)
  • 1 tablespoon oil
  • 1 tablespoon flour
  • 2 cups water or broth
  • Salt and pepper (to taste)

👨‍🍳 Instructions

  1. Prepare the filling
In a bowl, mix ground meat, rice, onion, garlic, egg, paprika, salt, and pepper until well combined.

  2. Stuff the peppers
Remove the tops and seeds from the peppers, then fill them with the meat mixture (don’t overpack).

  3. Make the sauce
In a pot, heat oil and stir in flour to form a light roux. Add tomato paste, then gradually pour in tomato puree and water. Season with salt, pepper, and a little sugar.

  4. Cook the peppers
Place the stuffed peppers into the sauce. Cover and simmer gently for 45–60 minutes, until the rice and meat are fully cooked.

  5. Serve
Serve hot with extra sauce and fresh bread.
