Hungarian Goulash Soup (Gulyásleves)
Ingredients
- 500 g beef chuck, cubed
- 2 tbsp vegetable oil
- 1 large onion, finely chopped
- 2 garlic cloves, minced
- 2 tbsp Hungarian sweet paprika
- 2 tbsp tomato paste
- 4 cups beef broth
- 3 potatoes, peeled and diced
- 2 carrots, sliced
- 1 tsp caraway seeds
- 1 bay leaf
- Salt and black pepper to taste
- Sour cream, for serving (optional)
Instructions
- Heat the oil in a large pot and sauté the onion until soft.
- Add the garlic, paprika, and tomato paste, stirring for 1 minute.
- Add the beef and cook until browned.
- Pour in the beef broth, then add the caraway seeds, bay leaf, salt, and pepper.
- Simmer for about 1½ hours, or until the beef is tender.
- Add the potatoes and carrots, then cook for 20–25 minutes until the vegetables are soft.
- Remove the bay leaf and serve hot with a spoonful of sour cream if desired.
