Hungarian Crêpes (Palacsinta)
Ingredients
- 3 large eggs
- 500 ml (2 cups) milk
- 250 ml (1 cup) sparkling water (or regular water)
- 250 g (2 cups) all-purpose flour
- 1 tbsp sugar
- 1 pinch salt
- 2 tbsp vegetable oil (plus a little for the pan)
Instructions
- In a large bowl, whisk together the eggs, milk, sparkling water, sugar, salt, and oil.
- Gradually add the flour while whisking until the batter is smooth and lump-free.
- Let the batter rest for 20–30 minutes.
- Heat a lightly oiled non-stick pan over medium heat.
- Pour a small ladle of batter into the pan and swirl to coat the bottom evenly.
- Cook for about 1–2 minutes until the edges lift, then flip and cook for another 30–60 seconds.
- Repeat with the remaining batter.
- Serve rolled or folded with your favorite filling, such as jam, sweetened cottage cheese, chocolate spread, or cinnamon sugar.
