Hungarian Beef Goulash

Ingredients:

  • 500 g beef, cut into cubes
  • 2 onions, chopped
  • 2 tbsp vegetable oil
  • 2 tbsp Hungarian paprika
  • 2 cloves garlic, minced
  • 2 carrots, sliced
  • 2 potatoes, diced
  • 1 red bell pepper, chopped
  • 1 tomato, chopped (or 2 tbsp tomato paste)
  • 1 tsp caraway seeds (optional)
  • 1 L beef broth
  • Salt and black pepper to taste
  • Sour cream, for serving

Instructions:

  1. Heat the oil and sauté the onions until golden.
  2. Add the garlic and paprika, then stir for 30 seconds.
  3. Add the beef and cook until browned.
  4. Stir in the tomato, bell pepper, and caraway seeds.
  5. Pour in the beef broth, cover, and simmer for 1½–2 hours until the beef is tender.
  6. Add the carrots and potatoes, then cook for another 25–30 minutes until soft.
  7. Season with salt and black pepper.
  8. Serve hot with a spoonful of sour cream and fresh bread.
