Hungarian Beef Goulash
Ingredients:
- 500 g beef, cut into cubes
- 2 onions, chopped
- 2 tbsp vegetable oil
- 2 tbsp Hungarian paprika
- 2 cloves garlic, minced
- 2 carrots, sliced
- 2 potatoes, diced
- 1 red bell pepper, chopped
- 1 tomato, chopped (or 2 tbsp tomato paste)
- 1 tsp caraway seeds (optional)
- 1 L beef broth
- Salt and black pepper to taste
- Sour cream, for serving
Instructions:
- Heat the oil and sauté the onions until golden.
- Add the garlic and paprika, then stir for 30 seconds.
- Add the beef and cook until browned.
- Stir in the tomato, bell pepper, and caraway seeds.
- Pour in the beef broth, cover, and simmer for 1½–2 hours until the beef is tender.
- Add the carrots and potatoes, then cook for another 25–30 minutes until soft.
- Season with salt and black pepper.
- Serve hot with a spoonful of sour cream and fresh bread.
