Hungarian Bean Soup with Dumplings (Babgulyás with Csipetke)
Ingredients:
- 250 g white beans (cooked or canned)
- 1 onion, chopped
- 2 carrots, diced
- 2 potatoes, diced
- 2 cloves garlic, minced
- 1 tbsp Hungarian paprika
- 1 tbsp tomato paste
- 1.5 liters vegetable or meat broth
- 2 tbsp oil
- Salt and black pepper to taste
- Fresh parsley
For the dumplings (Csipetke):
- 1 egg
- 80 g flour
- Pinch of salt
Instructions:
- Heat the oil in a pot and sauté the onion until soft.
- Add garlic and paprika, then stir in the tomato paste.
- Add carrots, potatoes, beans, and broth.
- Season with salt and pepper and simmer for 25–30 minutes until the vegetables are tender.
- Mix the egg, flour, and salt to make a firm dough.
- Pinch small pieces of dough and drop them directly into the simmering soup.
- Cook for another 5–7 minutes until the dumplings float.
- Sprinkle with fresh parsley and serve hot.
